Rainbow yogurt mousse cake

The weather is hot in summer, and making decorated cakes is an embarrassing task. So if you have a summer birthday, I recommend eating mousse cake. The advantage of making a mousse cake is that the surface is flat and does not need to be wiped. After freezing, the decorative cream is squeezed onto the upper surface, and the cake is frozen, which slows down the melting speed. Moreover, in fact, mousse cake is great to eat in summer, and it tastes cold, which is quite good. As long as there are enough ingredients, mousse can also be made elegantly!

Cut 2 pieces of gelatine into pieces, soak them in ice water to moisten them, then pick them up and melt them in hot water.

Add 40 grams of fine sugar to the homemade sugar-free yogurt and mix evenly, then add the melted gelatine and mix quickly while adding it.

Add the yogurt liquid to the light cream and mix well to form a yogurt mousse liquid.

First put a 6-inch piece of oil-absorbing paper on a 6-inch removable bottom mold, and then put a piece of cake in it.

Pour a little more than one-third of the mousse liquid, then add the diced mango, and then pour a little more mousse liquid to fill the gaps in the diced mango.

Then add the second cake slice.

Pour in the remaining mousse liquid and shake briefly to release air bubbles. Cover the surface with a plate and refrigerate in the refrigerator for more than 4 hours.

Take it out and demould: There are many methods, as long as it can be demoulded. After unmoulding, use two knives to transfer the cake to the cake base.
