I never go out to buy hand-made noodles, I always make them myself. In fact, it is not difficult to make the dough by hand. If you have a noodle machine, whether it is manual or automatic, it is good. It is very simple to use the noodle machine to roll out the dough and then use the noodle machine to press it into noodles. It's a little troublesome without a noodle machine, but it's easy to operate. Use a rolling pin to roll out the dough thinly and cut it into noodles. Hand-rolled noodles are also sold, both thick and thin. Hand-rolled noodles are more delicious. They are chewy, smooth and elastic. Paired with meat sauce, it is spicy and refreshing. It is so delicious that it is not a problem to eat more than one bowl of noodles.

  1. Add an appropriate amount of water to the flour and mix it into a dough. It should be slightly hard and should be cooked for at least half an hour. I mixed the dough in the morning, covered it with plastic wrap and left it to bake. At noon, I rolled the dough by hand and it was ready. If you have a bread machine, use the bread machine to knead the dough directly. With one kneading procedure, the dough does not need to be battered.

  3. Sprinkle more flour on the dough and use a manual noodle machine to press it into a dough sheet. The dough sheet will be very long. Be careful to sprinkle some flour on the pressed dough sheet to avoid sticking.

  4. Then use a noodle press to press the dough into noodles. This is thin noodles, which are much thicker than dragon noodles, so they are especially suitable for eating fried noodles.

  5. When all the noodles are done, add an appropriate amount of water to the pot. Bring the water to a boil and add the noodles. The water should be wider because there is a lot of flour stuck to the noodles and it is easy to mix with the soup. Cooking noodles is also very simple. Bring to a boil over high heat and pour cold water. Boil again and pour cold water. The third time you boil the noodles, the noodles are cooked to perfection.
