  1. Peel and dice the lotus root, soak in water and set aside. Chop green onions and dry chilies into sections. Take another small bowl, add 1 spoon of light soy sauce, 2 spoons of vinegar, 1 spoon of sugar, and 1 spoon of cooking wine and stir evenly.
