Wash the purchased fish head and put it into a bowl. Add salt, cooking wine, white pepper, onion and ginger evenly and spread over the whole fish head and marinate for 30 minutes to absorb the flavor.

Take a small bowl and add a small amount of steamed fish soy sauce and chicken powder, mix well. Pour the marinated fish head into the sauce and ingredients for marinating the fish head (except for ginger and green onions), then add red and green chopped peppers and set aside.
