Fried Rice with Cured Bean Okara and Egg
Overview
There is a lot of okara to make a piece of tofu. I also used half a bowl of bean dregs to make fried rice and added some leftover ingredients. It was delicious and nutritious.

Have materials ready.

Peel the carrots and cut into small cubes; cut the bacon into small cubes and mince the onion and ginger.

Blanch corn and peas.

Beat the eggs into the bean dregs and mix well.

Heat oil in a pan, pour in the egg and bean dregs mixture and stir-fry until cooked and set aside.

Heat the pan again, fry the bacon until the oil is released, then add the chopped green onions and ginger and stir-fry until fragrant.

Add carrots, corn and peas and stir well.

Then pour in the fried eggs and bean dregs and stir-fry.

Pour the rice into the pot and stir-fry together.

Finally, add appropriate amount of salt and pepper and stir-fry evenly.
