Mei Ling Porridge
Overview
Meiling porridge, also known as Meiling porridge and soy milk and yam porridge in the Republic of China, is a dish created during the Republic of China. Meiling porridge is made of soy milk, glutinous rice, japonica rice, yam, wolfberry, rock sugar and other ingredients. It is light and simple, but also rich in nutrients. It is said that there was a time when Soong Meiling didn't want to eat or drink, so the chef in the mansion cooked a pot of porridge using fragrant rice, soy milk and other ingredients. Soong Meiling ate it and developed an appetite. Later, it became her favorite porridge. Later, it spread to the people and was called Meiling porridge.

Mix glutinous rice and japonica rice into clean water and soak for more than 2 hours. Put the black beans into the soymilk machine and beat into soymilk and set aside.

Peel the yam and steam it in a steamer until soft, then mash it into puree and set aside.

Pour a large cup of black soy milk and half a cup of water into a casserole and bring to a boil.

Pour in the soaked rice and bring to a boil, then reduce to low heat and simmer for about 5 minutes.

Pour in the yam puree and continue to simmer over low heat, stirring occasionally (to prevent sticking to the pan)

Cook for about half an hour until the rice grains are soft and mushy, add an appropriate amount of rock sugar and continue cooking until the rock sugar dissolves.
