Red Oil Chaoshou
Overview
Hong You Chao Shou is a famous Sichuan snack. I have never tasted the authentic version and I don’t know how spicy it is. One day I was really craving for it, so I fried some bean paste and added Sichuan pepper powder and Sichuan pepper oil to make a spicy flavor that I could bear. The taste was very fresh and I enjoyed it.

Add salt, light soy sauce, dark soy sauce, minced ginger, minced green onion, water starch, and egg white to the minced meat (there were no eggs, so I used 3 quail eggs instead).

Stir vigorously in one direction.

Take a small wonton wrapper and add appropriate amount of filling.

Fold the two corners in half.

Put some water on the other two corners, intersect them, and tidy up the corners.

Heat the oil in the pan and add a spoonful of Pixian bean paste.

.Add minced garlic, minced green onion and stir-fry evenly

Take it out, add appropriate amount of beef powder, pepper powder and pepper oil, salt and sesame oil.

Put your hand under the water and boil the pot until it floats. Let it simmer for a while.

Spoon the cooked rice noodles on top and sprinkle with chopped green onion.
