Slice water chestnuts and set aside.

Cut open the eel, clean it and cut it into sections. Slice garlic.

Add salt and garlic to the oil pan and stir-fry.

Add water, green onions, wine, green vegetables, and water chestnuts and cook for 30 minutes. Remove from the pan.
