Open the back of the shrimp and remove the shrimp line, leaving the tail on so that the meat will not fall apart. After blanching, remove the tail and leave the shrimp head for frying in shrimp oil.

Hot spring eggs: It is best to use sterile eggs. After boiling three cups of water, add a cup of cold water, turn off the heat and simmer for 15 minutes. I heated it for 5 seconds halfway. The water temperature of the hot spring eggs is about 60-70°C.

Cut a few slices of lunch meat, some salted egg yolk, I used ready-made crushed egg yolk.
