Overview

The list of ingredients seems very long, and it feels like a very complicated afternoon tea snack. It only takes about an hour to prepare the finished product. The ingredients are all at hand, so you don’t need to buy them deliberately.   1. Part One: Almond crisps. Melt butter into liquid over water, add fine sugar and mix well.

  2. Add high-gluten flour, chopped almonds and mix well. (I ran out of almond kernels, so I used almond flour because I was lazy)

  3. After forming the dough, put it in a plastic bag and refrigerate until it hardens. (Personally, I don’t think there’s any need to freeze. I have to make the pie crust and strawberry filling later. Once they’re all done, the almond puff pastry will be hard enough)

  4. Part Two: Pie Crust. After the butter has softened at room temperature, add low-gluten flour and fine sugar, and knead it into coarse cornmeal with your fingers.

  6. Add water, knead into a ball, cover with plastic wrap, and refrigerate for 15 minutes. (Do not over-knead the dough.) When the dough is resting, you can wash the strawberries, remove the roots and dice them.

  7. Remove the rested dough from the refrigerator. Use a rolling pin to roll the dough into approximately 0.3-0.5 cm. Cover the pie plate with the dough sheet so that the bottom and sides adhere snugly to the pie plate. Use a rolling pin to remove excess pie crust, arrange it slightly, and use a fork to poke holes in the bottom of the pie.

  8. Part Three: Strawberry Filling. Heat the butter over water until it becomes liquid, add sugar and salt and mix well. Add milk and egg liquid and mix well. Add high-gluten flour and mix evenly.

  9. Add diced strawberries and mix well.

  10. Pour the strawberry filling into the pie plate until it is half full. I had too much filling and used extra pie crust to make two mini versions.

  11. Preheat the oven to 180 degrees. Take the almond puff pastry out of the refrigerator. Knead into small pieces and sprinkle evenly on top of the strawberry filling. Bake for 30 minutes until the strawberry filling is set.
