Put the sugar into pure milk and heat it. After the sugar is completely melted, pour it into the flour while it is hot. When the milk is not hot, sprinkle in the yeast powder and stir it into dough with chopsticks. Then add a little warm water in batches and stir it into a thick batter. Cover it with plastic wrap and keep it warm and moisturized for four hours. There will be irregular bubbles during fermentation.

After the first fermentation, add appropriate amount of flour.

Make a dough of moderate hardness and softness, cover it with plastic wrap, keep it warm and moisturize, and ferment for a second time for three hours. When the dough ferments to 2-2.5 times in size, the dough will be filled with regular small bubbles. Take it out and knead it to release the air.

Divide into ingredients, knead into steamed buns, cover with plastic wrap to keep warm, moisturize and let rise for 40 minutes. When the water in the steamer boils loudly, put it in the pot, steam over high heat for 40 minutes, turn off the heat and steam for another 5 minutes.
