Fried vermicelli with soybean sprouts
Overview
A very simple dish, but I think of it all the time. Soybean sprouts are rich in nutritional value, containing protein, fat, crude fiber and other nutrients. They have the functions of clearing away heat and improving eyesight, preventing gum bleeding and beautifying skin care.

Soak the vermicelli in water until soft.

Place in a pot of boiling water and cook.

Remove and drain.

Slice garlic, shred ginger, and cut dry chili into sections.

Wash and dry the soybean sprouts, wash and cut the leeks into sections.

Pour oil into the pot, add star anise and stir-fry over low heat until fragrant.

Add shredded ginger and chili and continue to stir-fry until fragrant.

Add soybean sprouts and stir-fry.

Add cooking wine and light soy sauce, stir-fry evenly, pour in a small bowl of boiling water, cover and simmer for a while.

Add vermicelli, light soy sauce and five-spice powder and stir well.

Add salt, sugar, garlic slices and stir-fry, finally add leeks until they change color.

Remove from pan and plate.
