Overview
This dish is a famous dish in Nanjing. Nanjing has a long history and there are many kinds of snacks. Even this ordinary dish of dried braised pork is said to have something to do with history. Legend has it that it was Emperor Zhu Yuanzhang’s favorite dish.

Prepare materials.

Put the chicken breast into water, add ginger, green onions, and cooking wine and cook until ready.

Remove the cooked chicken breasts and tear into shreds and set aside.

Slice the fried bean paste, add water to the pot and blanch the fried bean paste.

In another pot, add chicken broth, salt, ginger slices, and green onions and bring to a boil.

Put the drained fried bean paste into chicken soup and bring to a boil over high heat, then reduce to low heat and simmer slowly.

Add the cleaned soybean sprouts and continue cooking.

Prepare minced coriander and chopped chilies.
