Yunnan’s famous dish—fried ganba

Overview

The Han people in Yunnan are good at making ham and bacon, while the Hui people are good at making ham and bacon. Ganba is a unique food in Yunnan. It is made by cutting beef ganba (a delicacy of the Hui people, made from pickled and air-dried vegetable yellow beef) into thin slices, deep-fried, and sprinkled with Sichuan peppercorns and pepper noodles. Or when fried until crispy, discard the remaining oil and make a sweet and sour stir-fry sauce, topped with Sichuan peppercorns and sesame oil. Glossy red, crispy in the mouth, and rich in flavor.

Steps

  1. Niu Ganba can be bought everywhere in Yunnan, or you can make it yourself.

  2. Cut the castrated beef into slices. (This beef ganba is made by rubbing fresh beef with salt and drying it in the shade. It is a home-cooked dish in Yunnan.) Put blended oil in the pot and heat it to 78%. Add shredded ginger and dried chili and fry until the aroma is released. I say here that you must not fry it until it is burnt. Otherwise, the beef will not taste good.

  3. After adding the cut beef ganba and frying, the meat will turn soft in color. Some beef ganba will not become soft no matter how you fry it. This is because the castration time is different. It depends on the softness and hardness of your own beef, as well as your own taste. Remember not to add salt. Because it is castrated food. They are all relatively salty. Okay. In fact, it's as simple as fried peanuts.
