Dried Fruit Crispy Grain Bread
Overview
I haven’t made bread for a long time. I was too tired to knead the dough by hand and didn’t dare to try it again. I suddenly wanted to try to see if the pastry machine at home can do this function. I just did it. Don’t tell me, it worked... I was so excited. My baby can eat the bread made by my mother again! This bread is soft and delicious. It is so delicious with the addition of sweet and sour dried fruits and crispy chips...

Ingredients
Steps
-
Add water to the outer barrel of the pastry machine to the water level, add all the dough ingredients except butter to the inner barrel, close the lid, and start the dough mixing process
-
The dough is getting smoother and smoother
-
At the end of a dough kneading process, add room temperature softened butter and turn on the dough kneading and leavening function
-
After 20 minutes, the dough will be able to pull out the membrane, and it is fine without making toast. Close the lid and enter the fermentation function
-
Let the dough ferment until it doubles in size. Just make sure it doesn't collapse or shrink when you poke it
-
Apply a little oil on the dough counter to prevent it from sticking, take out the dough and let it rest for 15 minutes
-
Cut the dough into about 76 grams each, 8 pieces in total, and roll into long pieces
-
Roll it out thinly, sprinkle with dried fruit and a little sugar (omit the sugar in this step if you don’t like sweetness)
-
Roll up and seal the edges
-
Place the rolls into a round mold, leaving a gap in the middle. Arrange the rolls upright, seal with plastic wrap, and ferment in a warm place
-
How to make crispy chips: put together low flour, sugar, and room temperature softened butter
-
Mix evenly and knead into pieces
-
Let the dough rise to 2 to 2.5 times in size
-
Brush with all the egg wash (I brushed too much and the finished product was very dark)
-
Sprinkle with crispy chips and put in the preheated oven, 170 degrees, middle layer, for 20 to 25 minutes.
-
The baked bread smells so good
