Prepare the above ingredients, mix high-gluten flour and low-gluten flour.

Put all the ingredients except butter into the bread bucket. In order to prevent the yeast from being ineffective due to contact with sugar and salt, dig a hole in the flour and bury the yeast

Use chopsticks to stir into lumps and start the dough kneading process in the bread machine (if you don’t have a bread machine, please note that the proportion of wet ingredients in this recipe is quite large, so it will be particularly sticky at first)

After kneading the dough in the bread machine for 20 minutes, take out the dough, add butter, and knead it into a hand mask (you can directly let the bread machine knead for another 20 minutes. My bread machine does not produce the dough well, so I am used to taking it out and kneading it)

Weigh the total weight, divide into 12 equal parts, roll into balls, and put into molds (because it is a one-time fermentation, so shape it directly)

Put it in the oven, put a bowl of hot water on the lower floor to ensure humidity, and select the fermentation setting for 40 minutes. (If the oven does not have a fermentation function, you can leave it like this, but the time will be longer.) Pay attention to the state of the dough, and ferment until it is 2-2.5 times the original dough.

Take out the fermented dough, brush the surface with egg wash, and sprinkle with almond slices for decoration

Preheat the oven to 180 degrees, and heat the top and bottom to 150 degrees for 20 minutes
