Swordfish Wonton Fish Head Soup
Overview
The best fresh product of this season is saury. We don’t sell saury wontons here, but it’s not a problem for me, a foodie! The SF Express guy just delivered saury wontons from Jiangyin, and I happened to buy silver carp head, so I thought of stewing the two together!

Clean the fish head

Heat oil in a pan and sauté ginger and garlic until fragrant, add fish head and fry

Add appropriate amount of cooking wine and water

After the soup boils, turn to medium-low heat and simmer until the soup turns white. Add some salt to taste

Wrapped saury wontons

Bring another pot of water to boil and add wontons

After boiling, add some cold water and boil again and take it out

Put the wontons out into the fish head soup and boil again

Sprinkle with a little white pepper and chopped green onion

Take out the pot and put it into the basin
