Wash hairtail and cut into sections

Slice four cloves of garlic, take a bowl, add one spoonful of cooking wine, one spoonful of light soy sauce, one spoonful of dark soy sauce, three spoons of sugar, four spoons of rice vinegar, and five spoons of water to make the sauce (I forgot to take a photo)

Heat the pot and pour oil

Add hairtail and fry over high heat. If the oil temperature is low, the skin will fall off and the surface hardness will not be achieved

In another pot, add a little oil and sauté the garlic slices

Add the hairtail, stir-fry for a few times, and pour in the mixed juice. The juice should cover two-thirds of the hairtail. If the juice is less, you can add a little more water. If there is more juice, just leave a little. Cover and simmer for 4 to 5 minutes, turning it up and down twice in the middle, so that the hairtail is soaked in the juice
