Blueberry milk buns
Overview
This blueberry steak bun is hand-made jam using fresh blueberries. The blueberries smeared with fruit cream still seem to have a fragrance lingering between the teeth and lips. Served with Pai Bao, it really has a unique flavor.

250g cake flour, 45g sugar, 3g salt, 110g milk, 25g egg liquid, 20g butter (or 18g vegetable oil), 3-5g dry yeast, appropriate amount of blueberry jam,

Knead all the ingredients except butter until the dough reaches the expansion stage and spread out into a thin film that is not easy to break

Ferment for 40 minutes until 2-2.5 times in size. Dip in flour and poke holes. If it does not spring back or shrink immediately, it means it is well-risen

Deflate the dough, divide it into 8 equal parts and roll them into balls. Cover with plastic wrap and let rest for about 10-15 minutes

Take one portion and roll it into an oval shape, then roll it into a long strip.

After rolling everything up, put it into a baking pan, put a basin of hot water in the oven, and ferment for 40 minutes until it doubles in size
