Wash eggplants, peppers, coriander, and green onions.

Line a baking sheet with tin foil and brush the eggplant skin with a layer of oil.

Preheat the oven to 210 degrees, with upper and lower heat, middle layer, and bake for about 25 minutes.

Chop the garlic into minced garlic, wash and finely dice the preserved vegetables, chop the green onion and coriander, cut the peppers into rings, cut the mushrooms into small dices, and prepare the minced meat.
