Pine Nut Tofu
Overview
In the hot summer, my appetite has decreased. In order to make the food more comfortable for my family, I bought duck and used my Claypot King ceramic pot to stew a pot of soup. Duck soup is especially suitable for summer. Use the stewed duck soup to stew tofu. Sprinkle pine nuts when it comes out of the pot. When you eat, there is a spoonful of tofu in the soup and a few pine nuts. When you eat it in your mouth, the softness of the tofu and the crispiness of the pine nuts complement each other. Delicious, nutritious and healthy. After the stewed duck meat, I made Sichuan-style duck cubes stewed with winter melon separately. This is my husband's favorite. There are two ways to eat duck in one pot, which is suitable for different choices of the family.

Cut duck meat into pieces, blanch in cold water

When the scum floats, skim off the scum, take out the duck pieces, and then use hot water to clean the scum on the surface again

Prepare the ingredients for cooking the meat: 5 slices of ginger, 4-inch sections of green onions, 2 star anise, 5 bay leaves, 1 section of cinnamon, 2 dried chili peppers, and about 30 Sichuan peppercorns.

Add boiling water to the ceramic pot, add the blanched duck pieces and pork ingredients

Cover the lid, bring to a boil over high heat, then turn to low heat and simmer for about 50 minutes

Cooked duck soup

Remove all the duck pieces and cooking ingredients, leaving only the duck soup in the ceramic pot

Cut silk tofu into cubes and put into duck soup

Season with salt and pepper

Add a little kombu powder to make it fresh

Bring to a boil over high heat, then simmer over low heat for about 10 minutes

Put the tofu into a bowl and sprinkle with pine nuts

Make a Sichuan-style stewed duck with winter melon from the duck cubes, stir-fry the red oil with bean paste, add the duck cubes and winter melon, and stew until the winter melon is soft
