Peel and core the papaya and cut into pieces. Slice two grams of ginger and smash three grams.

Chop the ribs into pieces and wash them. Add water to the pot to cover the ribs. Add ginger slices. Bring to a boil over high heat, add cooking wine, cook for three minutes, skim off the foam, remove and drain. Set aside.

Put the ribs in the pressure cooker and add water slightly above the ribs. Add light soy sauce, star anise, Sichuan peppercorns, cinnamon bark, bay leaves, and crushed ginger. After the fire is raised, reduce the heat to low and simmer for 15 minutes.

After turning off the heat and reducing the pressure, open the lid of the pot, add papaya cubes, salt and chicken essence. Cover the pot and increase the pressure over high heat. When steam comes out, cook for three minutes and turn off the heat.

After deflation, put on a plate and sprinkle with coriander and serve. Beautiful
