Here I use chicken thighs, or chicken breasts, which are more tender and smooth than chicken thighs.
-
Marinate the boneless chicken legs with salt, cooking wine, and white pepper for at least half an hour and overnight. It is best to put it in the refrigerator overnight!
-
Here is a suggestion for you. It is best to use glutinous rice, but glutinous rice is not easy to cook. Even if you soak it overnight and steam it for 30 minutes, it will still be cooked. Therefore, those who like to save time can just use rice. If you use glutinous rice, it is recommended to steam the glutinous rice separately before making lotus leaf chicken rice. Soak the mushrooms in warm water to wash away impurities. Soak the lotus leaves in warm water until soft before use.
-
Use the remaining time to prepare the ingredients. It’s up to everyone. You can put whatever you like, corn kernels, diced vegetables or even your favorite fruits. There are no limits to food, just what you like!
-
Don’t forget this step. Heat a small amount of oil in a hot pan, stir-fry diced mushrooms to remove the water, then add diced chicken, diced carrots, and peas. The peas can be blanched in boiling water in advance. Stir-fry the dark soy sauce and light soy sauce together. It only needs to change color slightly. It doesn't need to be fully cooked. It will be steamed in a pot later.
-
Soak the glutinous rice, drain the water, and add a little dark soy sauce for color. Here is a suggestion for everyone, the ingredients, don’t put too much dark soy sauce in the rice, let alone add salt. After all, it is a staple food, so you don’t need to be too busy, and you should eat it with the dishes, otherwise you will consume too much salt in one dinner.

Now start mixing, it is more convenient to use disposable gloves, mix the rice and ingredients evenly. Here I used a little bit of scallop abalone juice, mainly to enhance the freshness, but you can also add oyster sauce.
-
Start by wrapping it in lotus leaves. This step does not require any good-looking shape, feel free to do as you like, as long as the lotus leaves do not fall apart and the ingredients inside do not fall out. It is recommended that you prepare hemp rope in advance and tie it up a little so that it will not leak.

Bring to a boil over high heat and steam for 30 minutes. Look, it's very simple but also very fragrant, right?
