Mashed Potato Pancakes
Overview
I wanted to make taro cakes, but found that I only had sweet potatoes at home, so I used them. It tastes good, fragrant and sweet. Crispy on the outside and tender on the inside, you can’t stop 😂

Ingredients
Steps
-
Peel, wash and slice the sweet potatoes, steam them in a pot with boiling water.
-
Mix low-gluten flour, corn starch, potato starch, eggs, a little salt and appropriate amount of water to form a thin paste.
-
Prepare appropriate amount of white sesame seeds.
-
Steam the sweet potatoes, take them out and mash them into puree.
-
Add more sugar, a little salt, a little milk, and glutinous rice flour and mix evenly into a thick paste. You can also add a little more glutinous rice flour to shape it into a ball. For personal taste, I like not to add so much flour and eat more sweet potatoes. So it's just a thick paste.
-
Dig a big spoonful of mashed potatoes, sandwich it between two biscuits🍪, and tidy up the corners (you can also feel free to eat it by yourself after all).
-
Then dip the entire edge of the cake with a layer of white sesame seeds, then put it into the prepared batter and coat it all over.
-
Pour an appropriate amount of cooking oil into the pot, and when the oil temperature is 70% hot, add the batter-coated cake base one after another.
-
Over medium-low heat, fry both sides until golden brown.
-
So crispy.

It’s so delicious, you can try it😊
