Colorful snowskin mooncakes
Overview
If you don’t like the sweetness of Cantonese-style mooncakes, then snowskin mooncakes are a good choice. They taste soft, glutinous and sweet but not greasy. The snowskin mooncakes sold outside are expensive, so make them yourself!

-
Steam over high heat for about 25 minutes, remove the plastic wrap and let cool slightly
-
Use a spatula to mix evenly
-
Wear disposable gloves and knead evenly
-
Form into a large smooth dough and let cool
-
Knead into long strips and divide into 25g small dough
-
Take a small portion of dough and add a small amount of matcha powder
-
Knead evenly
-
Use cocoa powder, red yeast rice powder, purple sweet potato powder, and pumpkin powder in turn to knead into small doughs of five colors
-
Divide the remaining dough into 25 grams of white dough
-
Take a piece of white dough, flatten it and put on your favorite fillings (the ratio for a 50g snowskin mooncake is 1:1: 25g crust, 25g filling)
-
Wrap well and roll into a round shape with the seam facing down
-
Shake the mold with the fried Chengfen (in fact, the mold will not stick if you let it cool without using powder)
-
Take out the flower pieces and fill them with colored ice skin (choose the color as you like)
-
Add flower slices filled with colored ice skin and press on the white ice skin dumplings
-
Make all the snow skins and mix and match the colors as you like. Use the remaining colored dough to make pure colored snow skin mooncakes. If the snow skin is not enough, you can add more fillings
