Cut a piece of fresh oxtail into pieces and soak in cold water for about two hours.

Peel the tomatoes;

Cut into small cubes.

Put oxtail in cold water, add ginger slices and cooking wine;

Bring to a boil and brew for about two minutes, remove and wash.

Pour the diced tomatoes into the pressure cooker;

Add ginger and pepper;

Add the oxtails, add enough water, turn to the soup setting, cover and simmer for about forty minutes.

After the pressure is released, remove the lid and adjust to the juice collection setting;
