【Sichuan】Cold Eggplant
Overview
Very delicious cold eggplant, also very delicious for cooking. I remember growing eggplant seedlings at home when I was a child, and they would produce eggplants. My favorite thing was to eat the cold eggplants made by my mother. The smell of garlic and vinegar made me greedy. Having said this, I couldn't help but swallow a mouthful of saliva:)

Two eggplants. I like to eat local eggplants, very tender bamboo shredded eggplants

Cut into strips and soak in water to prevent oxidation

Place on a plate and steam for 6 minutes

Use a garlic press to press the garlic into puree. Use a small bowl to mix the garlic paste, light soy sauce, vinegar, sugar, salt and sesame oil

Cut the green and red peppers into small circles and add them

Take out the steamed eggplant, pour the prepared sauce on it, and sprinkle with chopped green onion

Top with homemade red oil chili and mix well before eating.
