Cut potatoes and sweet potatoes into shreds and soak in water.

Blanch peas and white mushrooms in boiling water.

Thinly slice the red pepper.

Beat three eggs.

Heat a little oil in the pan.

Add potatoes and sweet potato shreds and stir-fry.

Add a little salt, sugar and white pepper.

Fry the sweet potato shreds until golden and soft.

Pour in the egg mixture.

Sprinkle mushroom slices, peas and peppers on top.
