Pinwheel Jam Crispy
Overview
The pinwheel jam puff pastry uses puff pastry dough, shaped into a pinwheel shape, and is decorated with cranberry jam in the middle. When you take a bite, you will have countless layers and a mouthful of crispy texture. You will feel so happy inside!

Take a clean container, mix medium flour, low flour, sugar and salt, and add softened butter;

Rub the softened butter into the flour mixture and spread the butter;

Make a cross cut on the smooth dough, wrap it in plastic wrap, and place it in the refrigerator to rest for more than 4 hours;

Roll the dough out along the cross cutter, and put flaky butter in the middle (if you don’t have flaky butter, you can use ordinary butter, put it in a plastic bag in advance and roll it into flakes);

Wrap butter on all sides of the dough, press it tightly and let out the air;

Roll the wrapped butter into a rectangular shape with the seal facing down, fold both sides in half towards the middle, and then fold in half again;

Roll it out into a rectangular shape again, fold both sides in half again, and then fold it in half again; in this way, a total of three rounds of rolling and folding are required. After folding, wrap it in plastic wrap and place it in the refrigerator to rest for 20 minutes;

Roll out the dough after three rounds into a rectangle with a thickness of 3mm, and cut off the irregular edges;

Draw a line along the diagonal line of the square dough piece, being careful not to cut the knife at the intersection of the diagonal lines;

Start making the windmill, fold the triangular dough piece in the middle, and use egg liquid as a glue;

Move the completed pinwheels to the baking pan and put a little cranberry sauce in the middle for decoration;

Preheat the oven to 200 degrees for the upper tube and 180 degrees for the lower tube. Place it on the second lower shelf of the oven and bake for 18 minutes. After baking, move it to a drying rack to cool.
