  1. Wash the big bones and ask someone to chop them in the middle when you buy them

  2. Dip it in water first to remove the blood

  4. Put the washed bones into a casserole, add the highest level of water, and bring to a boil over high heat

  7. Add onion and ginger, turn to low heat and simmer for two and a half hours without opening the lid
