One piece of fresh Spanish mackerel, head, tail and skin removed.

Mix the fish and pork fat and chop into puree.

Chop leeks, mince ginger, mix peppercorns, salt, oil, chicken essence, and stir into filling.

Add water and knead into soft dough.

Divide into ingredients and roll into dumpling wrappers. I also mixed some noodles with matcha powder and cocoa powder, but forgot to take pictures.

Wrap into dumplings in any shape. This is a new trick I learned, and it tastes even better than usual. Haha. Is it purely psychological?
