Stir-fried Amaranth with Black Bean Sauce
Overview
The amaranth that my mother planted in front of the house was harvested again. I picked a small basket. They are relatively tender and growing well. I usually stir-fry them with some garlic. This time I thought about adding some spicy tempeh to stir-fry. It is more appetizing and a change of taste~

Chop garlic and scallions and set aside spicy tempeh.

Pick and wash the amaranth and drain.

Heat oil in a pan and sauté chopped green onion and garlic.

Spoon a spoonful of spicy tempeh and saute until fragrant.

Add amaranth to pan and stir-fry.

After the amaranth is stir-fried, add an appropriate amount of light soy sauce.

Add a little salt to taste.
