Overview
It’s worth getting up 20 minutes earlier in the morning to make a more nutritious and delicious breakfast for my family.

Steps
-
Make the tofu first. I soaked the beans last night and put them directly in the soy milk machine. When I got up in the morning, I plugged it in and pressed it.
-
The tofu ingredients prepared last night include chopped peanuts, fungus, leeks, carrots, chopped green onions, shredded chicken, washed shrimp skin, and chopped pickles. It's a pity that there is no coriander at home.
-
When you wake up in the morning, just make soy milk and then go wash up. After cleaning up, the soy milk is also ground.
-
Strain the soy milk twice. The most suitable temperature for making tofu curd is about 85 degrees. So don't let the soy milk cool down.
-
Add a small amount of water to the lactone, about a small spoonful, and dissolve.
-
Slowly pour in the soy milk and stir evenly.
-
I boiled warm water in a wok and put the processed soy milk in it. Maintain temperature. We have to wait about 20 minutes for the soy milk to solidify. At this time, we can make the marinade for pouring the soy milk and spread the pancakes and fruits. When the pancakes and fruits are ready, the soy milk will solidify.
-
Put a little oil in the pot, add a little bit of super fresh flavor, put the fungus, chicken, shrimp skin, and carrots into the pot and stir-fry, then add an appropriate amount of water and bring to a boil. Add about 4g of salt and it will be fragrant.
-
The tofu curd after more than 20 minutes is very delicate. Use a spoon to scoop into chunks. In fact, you don’t need to dig it, you can just mix it directly when eating.
-
Dig the tofu brain, pour in the marinade, add leeks, pickles, and chopped peanuts. The hot and fragrant tofu puffs are ready in one night. Now let’s introduce the pancake fruit
-
I used filtered bean dregs and took about 50g
-
I made about 200g of noodles, 2g of salt, an egg, add an appropriate amount of water and mix well.
-
When the paste becomes like this, dip it with chopsticks and it can drip
-
Grease the pan with thin oil, pour some batter, and use a spatula to quickly spread the batter thinly and evenly. When the batter is slightly solidified on the surface, add an egg, scrape it with a spatula, and sprinkle with leeks, carrot cubes, and black sesame seeds. When you see that the eggs are slightly solidified, use a spatula to help flip them over.
-
Flip and spread with sweet noodle sauce. I don’t like my breakfast to be too salty, so I’ll use less sauce.
-
Put lettuce, fried fruit, and ham sausage made by yourself. Flip up the left and right sides first, then flip up the bottom and cover it. That's it.
-
This is how it works.
