Raisin Vanilla Milk Muffin Cake
Overview
I have always wanted to make cup cakes because I can make colorful cakes, so cute~ Especially the pink cake. As a pink person, I simply can’t resist that temptation. I bought some red food coloring a few days ago, and I can finally make the cake of my dreams. First, let's make the cake base for the cup cake. I don't like butter and the taste, so I used corn oil to make a traditional muffin cake - vanilla milk muffin.

Soak the raisins in hot water first.

Pour the wet ingredients such as eggs, corn oil, and milk into a large bowl.

Add sugar and salt and stir evenly with a spoon.

Then pour the dry ingredients such as cake flour, baking powder and vanilla powder into the wet ingredients.

Use a rubber knife to stir evenly from the bottom up (do not stir in circles) until the flour is completely moist.

Add the soaked raisins (drain the water) and continue to stir for a few times. If the batter looks rough and lumpy, do not continue to stir.

Put the mixed batter into a piping bag and squeeze it into the mold until it is 2/3 full. Do not fill it to the full.

Place in a preheated 180°C oven and bake for 25 minutes until the surface is completely swollen and golden brown.
