Chicken gizzards need to be blanched after being cut. Let the water boil before adding the chicken gizzards. Just turn off the heat after boiling the pot again. Remove chicken gizzards from cold water and drain.

Cut the hot peppers into shreds and cut the dry red peppers in the middle.

Spray a cold pan with olive oil for two seconds. Don't wait for the pot to heat up. Add the chopped peppercorns and stir-fry over low heat. I crush the peppercorns directly with a grinding bottle. Crushed peppercorns are more flavorful than whole peppercorns.

When the pepper smells fragrant, turn to high heat and stir-fry the chicken gizzards.

Add the two peppers and continue to stir-fry over high heat. If the chicken gizzards are put into the pot without draining the water, water will come out. Remember to fry the water before adding the peppers. After the spiciness comes out, add salt, oyster sauce, and sugar. Continue to stir-fry.
