Thaw and wash the Arctic shrimp at room temperature, soak the tempeh in hot water, wash and cut the celery into inch-long sections, blanch in water and let cool.

Spread a thin layer of dry cornstarch on the skin of the Arctic shrimp (I forgot to take a photo of this process), heat the oil in a pan until it is 70% hot, add the arctic shrimp dipped in cornstarch, and fry until the skin is crispy and take it out.

Pour oil into the pot, add Sichuan peppercorns, tempeh, chopped chili sauce, ginger and green onions and stir-fry.

Pour the blanched celery into the pot and stir-fry.

Pour the fried Arctic shrimp into the pot, add a little sugar and soy sauce to taste (because tempeh and chopped chili sauce have salt, so this dish does not need to add salt), stir-fry evenly and serve.
