Fried buns with curry rice
Overview
I have eaten the Taiwanese version of curry fried rice before and it was delicious. I improved it when I got home. I happened to have yesterday's steamed buns at home, so I cut them into small dices and fried them together. It felt good. When I was a child, I often ate fried buns, which brought back memories of my childhood.

Prepare materials.

The rice is cooked and set aside.

Dice the bell peppers separately and set aside.

Finely chop green onions.

Cut the buns into small cubes.

Pour out a bowl of rice and add two egg yolks and curry powder.

Stir the rice evenly and set aside.

Put the cut buns into a large bowl, add 2 egg whites and mix well.

Add oil to the wok and heat until the oil temperature is 70% hot.

Add the mixed buns and fry until golden brown.

Remove the steamed buns and set aside.

Add base oil to another pot, add the mixed rice and stir-fry quickly with a spatula.

Stir-fry the rice until you can see the rice grains bouncing around in the iron pot. Add the steamed buns and continue to stir-fry.

Before serving, add peppercorns, salt, and chives and stir-fry evenly.
