Remove the heads of the shrimp and pick out the shrimp lines.

Pour vegetable oil into the hot pan and fry over high heat for 2 minutes. Remove and set aside

Slice the lotus root, cut the celery into small pieces, and shred the onion

Use the oil in the pot to stir-fry the Sichuan peppercorns, millet chili, hot peppers, garlic, and dried chilies until fragrant. I also added some homemade minced pepper sauce. You can buy bean paste if you don’t have to. Remember to use low heat when frying to avoid burning.

After the aroma comes out, add the lotus root slices, celery and onion in sequence. After the shrimps are cooked, add the previously fried shrimps, stir-fry a few times and it's ready to serve. My chili sauce is a bit salty, so I didn’t add any salt. If you make it at home, you can add chili and salt according to your own taste.
