Peel the eggplant, wash and cut into hob pieces

Wash and cut the kidney beans into sections

Slice the pork belly and prepare the ingredients

Heat oil in a pan, add pork belly and stir-fry

Add onion, ginger, garlic and star anise and saute until fragrant, cooking wine and light soy sauce

Add eggplant and stir-fry evenly

Add the kidney beans and stir-fry evenly to dry out the water. Add an appropriate amount of salt and a little water and simmer for a while

Simmer until the soup thickens, then turn off the heat and remove from the pot
