Overview

Prepare the ingredients.

Clean the chicken, add salt, cooking wine, green onions, shredded ginger, massage evenly and marinate for more than 4 hours.

Add 2 tablespoons of dark soy sauce, 2 tablespoons of light soy sauce, a small spoonful of sugar, 1 tablespoon of salt, star anise, bay leaves, Sichuan peppercorns, cooking wine, green onions, and ginger to the water. Bring the prepared chicken to a boil, then simmer on low heat for half an hour.
