Cut the fish belly into pieces, add shredded ginger, cooking wine, salt and soy sauce, mix well and marinate for 1 hour.

Place the ginger and garlic in a food processor and grind into pieces.

Add the chopped ginger and garlic to the minced pepper paste according to your own taste.

Arrange the fish belly neatly on the plate.

Heat oil in a pot. When the oil is very hot, pour the ginger, garlic and chopped pepper into a bowl. Add pepper, soy sauce, chicken essence and sesame oil and mix well.
