Cut the garlic into minced garlic, cut the white pepper into fine pieces, and cut the small red pepper into rings. If you like it spicier, don’t remove the pepper seeds.

Wash and cut fresh pork ribs into small pieces, add shredded ginger, light soy sauce, oyster sauce, appropriate amount of salt, pepper, peanut oil and a small amount of minced garlic and marinate for more than an hour. Line a baking pan with tin foil, pour the ribs and marinade, arrange the ribs, cover with tin foil, preheat the oven to 200 degrees, and bake for 25 minutes. If you don't have an oven, you can cook it in the microwave for 15 minutes. When I don't have an oven, I just use the microwave and it works well.

Take out the ribs, pour more peanut oil in the wok than when cooking, and heat it up to 70 to 80% heat. Use chopsticks to put the ribs into the stir-fry and fry. This process is very short. Turn to medium heat for about 3 minutes and the surface of the ribs will turn golden brown. Turn off the heat immediately, use a strainer to scoop out the ribs and filter the oil, put it on a plate, add minced garlic, fine white chili pepper and salt and pepper while it is still hot, and mix well.
