  1. Put the pork belly with skin into clean water, add ginger slices and green onion segments and cook for about 15 minutes, until the meat is cooked and the skin can be pierced with chopsticks.

  2. Wash and cut the garlic sprouts (called green garlic in the Northeast) into sections, and cut the front end diagonally with a knife so that the thickness is even.

  3. Three slices of ginger, about ten pcs of Sichuan peppercorns, half a red pepper cut into diamond-shaped pieces (for color matching, but not needed), one spoonful of tempeh chopped with a knife, and one spoonful of Pixian bean paste.

  5. Put a little bit of oil in the pot (if you choose fatter meat, you can add the meat slices and stir-fry directly without adding oil), add the meat slices and stir-fry over medium heat.

  8. Add the Pixian douban and fry until the red oil comes out. The Pixian douban must be fried thoroughly otherwise it will have a sour and beany smell.

  10. Add the meat slices and black bean sauce and stir-fry for a while.

  11. Finally, add the garlic sprouts, add an appropriate amount of salt, 2 tablespoons of sugar and a little chicken essence and stir-fry until the garlic sprouts are broken.
