Prepare materials, chop onion, ginger and garlic

Add the shrimp and fry over low heat, pressing the shrimp head with a wooden spatula from time to time to release some shrimp oil. After frying one side, flip and fry the other side

After frying the shrimp, pour out the excess oil, leaving some base oil in the pan, and sauté the onion, ginger and garlic

Add tomato paste and sugar and stir well

Add shrimp and stir-fry, add cooking wine

Add half a small bowl of water, set to high heat, cover the pot and simmer for 2 minutes to reduce the juice
