Blanch the pork ribs and set aside.

Add ginger, Codonopsis pilosula, red date slices, cooking wine, and water to the casserole (the water is 4/5 of the pot). Bring to a boil over high heat, then reduce to low heat and simmer for 1 and a half hours.

Add the winter melon and cook for half an hour.

Add salt and the onions are edible!
