Prepare the ingredients: prunes, pork belly. It turns out that my knife skills are not good, so I bought ready-made sliced pork belly

Wash the pork belly and blanch it. The meat should be put in cold water to better remove the blood. Wine and ginger are added to the water to remove the fishy smell.

Boil the water for about 3-5 minutes. Do not turn off the heat and remove the meat slices. This will prevent dirt from sticking to the meat.

Add a spoonful of sugar to cold oil in a cold pan and stir-fry the sugar color. Stir-fry over low heat. Don't be impatient.

Stir-frying the sugar color is to give the meat a better color, which can reduce the amount of soy sauce and is healthier.

Fry until 2 sides are golden brown, add cooking wine and a little light soy sauce, and take it out of the pan. (If you think the color is not red enough, you can add a little dark soy sauce)

There is no need to pour away the remaining oil from the fried meat. It can be used directly to stir-fry the prunes. Add garlic, stir-fry the prunes, and add salt to taste. Generally, there is no need to add additional sugar. You can taste it before seasoning. Then add a little water and cook.

Put it into the pressure cooker and bring it to a boil, then steam over low heat for 45 minutes.
