Whole wheat ear bread
Overview
Epi bread is usually derived from French baguette. Cut long strips of dough into small pieces. Because the dough looks like ears of wheat after shaping, it is named wheat ear bread. Wheat bread can be wrapped with bacon slices, or the filling can be changed according to personal taste. After the finished product is roasted, it looks like yellow wheat ears. It is convenient to break off a small piece and eat it, and it has a natural wheat aroma and sweetness when chewed. Due to the complete nutrition of whole wheat flour, it has the functions of aiding digestion, preventing constipation, anti-fatigue, and anti-depression.

Steps
-
Bread ingredients are ready
-
Put the milk, sugar and salt into the bread bucket first, then pour in the whole wheat bread flour and yeast
-
Start the kneading process. After the dough is kneaded and moist, add softened butter and continue kneading
-
When the dough becomes softer and moister, and a thick film can be easily pulled out with your hands, after kneading is completed, round the dough and place it in a bread barrel for basic fermentation
-
Chop the red dates and walnut kernels and set aside
-
When the dough has doubled in size, dip your fingers in flour and poke holes on the top of the dough. If it does not collapse or shrink, it means the fermentation is successful
-
Take out the dough, place it on the kneading mat, weigh it after deflating, divide it into two equal parts, roll each into a round shape, cover it with plastic wrap and let it rest for 10 minutes
-
Take a piece of dough and roll it into a rectangular shape
-
First apply a layer of whole egg liquid, then evenly sprinkle with half of the chopped red dates and walnuts, and press gently with your hands to flatten
-
Gently roll it up from bottom to top, with the seal facing down
-
Tilt the scissors at 30 degrees and cut 8 slits on the dough roll
-
Pull out the dough pieces from left to right and arrange them into the shape of wheat ears
-
Move the wheat bread embryo into the baking pan, process the other roll in sequence, and then place it in a warm and humid place for secondary fermentation. I fermented it in the oven. Put a bowl of water in the oven to increase the humidity
-
When the green embryo has doubled in size, brush the surface with a layer of egg wash and start preheating the oven to 180 degrees
-
Place the baking sheet and raw embryo into the middle rack of the preheated oven, heat up and down at 180 degrees for about 18 minutes
-
After taking it out of the oven, the interface of the bread will be relatively soft. You can put it in the oven to dry until it is warm, then gently take it out and place it on the drying rack. Let cool and store in a bag
