Vegetarian Passion Fruit Pound Cake
Overview
I bought a box of passion fruit online and besides making juice, I also made cakes. I have long wanted to try this vegetarian version of pound cake. Passion fruit is added and it tastes really good. I just don’t have suitable fruits or dried fruits at home. How about sprinkling some on top to make it richer

Put the eggs into a basin and beat them ~

Mix sugar + oil and beat until emulsified.

Add the egg liquid in portions and continue beating until emulsified (it is recommended to use an electric egg beater, my hands are tired from beating with my hands)

Add the pulp of one passion fruit and mix well

Sift in the low flour and mix well (my daughter will help with the dripping below~~~)

Mix well and set aside

Pour into a lightly oiled mold

Sprinkle your favorite dried fruits on the surface (I only have red dates at home)

Place in a preheated oven at 170 degrees Celsius on the middle shelf. After 15 minutes, turn the temperature to 150 degrees. Bake for another 30 minutes until the cake puffs up and the surface is golden brown. It's ready to be baked ~

The freshly baked cake is soft, fluffy and delicious~

...It's worth a try. If you can't finish it in one day, just heat it in the microwave the next day. I think this cake tastes better when eaten hot~
