Fried eggplant box
Overview
Fried eggplant box is a traditional dish. It is a kind of food made by cutting the eggplant into thick slices, slicing it in the middle without cutting it, stuffing it with some meat filling, dipping it in the batter, and then frying it. Derived from this is the fried lotus root box. Both are made in the same way and are both home-cooked delicacies.

Main and auxiliary ingredients: eggplant, meat filling Seasoning: oil, salt, monosodium glutamate, oyster, onion, ginger, pepper, flour

First mix the fillings: add salt, monosodium glutamate, pepper, green onion and ginger, and fresh oysters to the meat filling. Just stir it evenly.

Add appropriate amount of water to the flour and mix into a sticky batter.

Wash the eggplant and cut into pieces. Dip a layer of dry flour inside first, so that the meat filling can stick relatively firmly.

Add appropriate amount of meat filling and knead gently. Complete them all in sequence.

Take an eggplant box and dip it evenly in the batter.

Fry in hot oil. Fry over medium heat until both sides of the eggplant box are browned.
