Prepare the pig's trotters and soybeans. Soak the soybeans overnight in advance.

Clean the pig's trotters, add ginger slices and a little white wine to a pot of cold water and blanch for 3 minutes.

Rinse with cold water to remove any scum.

Heat oil in a pan and add rock sugar over low heat.

Boil the sugar until it turns slightly yellow.

Add a spoonful of bean paste and stir-fry out the red oil.

Add the pork trotters and stir-fry until browned, set aside for later use.

Heat oil in another pot.

When the oil is 70% hot, add the soybeans and stir-fry until cooked.

Add a little salt and light soy sauce and simmer for half a minute.

Add garlic and stir-fry evenly.

Place the soybeans into the electric pressure cooker and place them on the bottom.

Pour in the pig's trotters, add cinnamon, star anise, bay leaves, and dried chili peppers, cover the pot and simmer for 25 minutes.
